1. How to Slice in Illustrator
Step 1
Select the Slice Tool (Shift-K) from your toolbar and simply click and drag to set a sliced section.

I used this graphic from Envato Elements.
Step 2
Alternatively, you can select the design element that you wish to slice and go to Object > Slice > Create from Selection. This will create a slice that perfectly envelops your selection.

Step 3
When you're dealing with several design elements and you wish to add separate slices for each element, select all your objects and go to Object > Slice > Make.

I used these graphics from Envato Elements.
2. How to Edit a Slice in Illustrator
Step 1
Select the Slice Selection Tool from your toolbar and hover your cursor over the edges of an existing slice. Simply click and drag to adjust the size of that slice as you wish.

Step 2
Keep in mind that while using the Create from Selection and Make commands, you may get the same result, but things will work differently when you try to adjust such slices.
If you choose to move these slices using the Slice Selection Tool, the first will move along with the containing design, while the second slice will move but the design will stay in its place.

Similarly, if you choose to scale such slices (Object > Transform > Scale), one will scale along with the design, while the other will scale but the design will keep its size.

Congratulations! You're Done!
Now that you learned the basics of Illustrator's Slice Tool, feel free to use these techniques in your future projects.
