1. How to Resize an Image in Illustrator Without Distortion
The most accessible way for you to resize images in Illustrator is via the bounding box. Use the Selection Tool (V) to select your image, and you'll get a bounding box around your selection. Go to View > Show Bounding Box (Shift-Control-B) if you can't see it.
Hover your cursor over the corner of your selection, and once it turns into a double arrow, simply click and drag to resize your image. Hold down the Shift key as you do it to proportionally resize your image.

2. How to Resize an Image in Illustrator Without Losing Quality
As long as you don't go over the size of the source image, you don't have to worry about losing the quality of your image. Feel free to shrink and enlarge it as many times as you need.
Besides the bounding box, you can also use the Scale Tool (S) to resize an image in Illustrator. Simply click and drag to scale, and remember to hold down the Shift key to scale proportionally.

3. How to Numerically Resize Images in Illustrator
There are several methods that can be used to numerically resize images in Illustrator.
Method #1
Select your image and adjust the size using the settings from the Control panel (Window > Control), Transform panel (Window > Transform), or the Properties panel (Window > Properties).
