1. How to Cut Out an Image in Illustrator Using a Clipping Mask
To cut out an image in Illustrator, start by creating a path around the portion that you wish to cut. So select the Pen Tool (P) and start drawing that path.

Once you're done, select the path along with your image, and go to Object > Clipping Mask > Make or use the Control-7 keyboard shortcut.

2. How to Cut Out an Image in Illustrator Using an Opacity Mask
Alternatively, you can use an opacity mask to cut out an image in Illustrator. When it comes to opacity masks, keep in mind that white makes things visible and black invisible, while shades of grey will lead to partial transparency. For this example, I drew a path around the section of the photo that I wanted to hide and made it black (R=0 G=0 B=0).

Once you're done, select the black shape along with the image, and click the Make Mask button from the Transparency panel (Window > Transparency). Remember to also uncheck that Clip box.
